How to Make Grass Jelly and Soy Milk Layered Cups

Prepare the grass jelly layer by dissolving 1 teaspoon of agar-agar powder and 1 tablespoon of sugar in 1/2 cup of water in a small saucepan. Heat until just simmering.

Stir in half of the grass jelly (either finely mashed or melted) into the agar-agar mixture until uniform. Pour this mixture into four serving glasses until one-third full, then drop a few solid grass jelly cubes into each glass.

Place the glasses in the refrigerator for about 15 minutes. The surface should be firm but still slightly tacky to ensure the layers bond.

In a clean pot, combine the soy milk, pandan leaves, the remaining agar-agar powder, and the remaining rock sugar. Heat over medium-low, stirring constantly until the sugar and agar-agar are fully dissolved.

Remove the pandan leaves. Gently pour the soy milk mixture over the back of a spoon onto the set grass jelly layer to create a clean separation.
