2 Method
Step 1. Pre-heat your oven to 200°C (390°F). Roll out the puff pastry on a baking sheet lined with parchment paper and prick the entire surface thoroughly with a fork. Place another piece of parchment and a second baking sheet on top to keep the pastry flat.
Step 2. Bake for 20 minutes with the weight on. Remove the top baking sheet and parchment, then dust the pastry heavily with powdered sugar. Return to the oven at 220°C (430°F) for 5-7 minutes until the sugar has melted into a dark golden caramel glaze. Let it cool completely before cutting into 12 identical rectangles.
Step 3. Prepare the chestnut cream by whisking the Waguri paste and softened butter until smooth. Gradually add 50ml of heavy cream and whisk until you reach a stiff, pipeable consistency. Transfer to a piping bag with a plain nozzle.
Step 4. Prepare the Chantilly cream by whipping 200ml of cold heavy cream with granulated sugar and vanilla bean paste until stiff peaks form. Transfer to a piping bag with a star nozzle.
Step 5. To assemble, place one pastry rectangle down. Pipe alternating dots of chestnut cream and Chantilly cream. Place thin slices of candied Waguri in the gaps. Top with a second pastry rectangle and repeat the piping process.
Step 6. Place the third pastry rectangle on top. Garnish with a final dollop of cream and a whole candied Waguri chestnut. Dust lightly with powdered sugar and serve immediately.
