1 Ingredients

Qty Ingredient
1 medium head 500 g Cauliflower, cut into medium florets
2 medium 300 g Potatoes, peeled and cubed
3 tbsp 45 ml Vegetable Oil
1 tsp 2 g Cumin Seeds
0.5 tsp 1 g Turmeric Powder
1 tsp 2 g Kashmiri Red Chili Powder
1 inch piece 5 g Fresh Ginger, julienned
2 pieces 10 g Green Chilies, slit
1 tsp 2 g Garam Masala
0.5 tsp 1 g Amchur (Dried Mango Powder)
1 tsp 5 g Salt
0.25 cup 10 g Fresh Cilantro, chopped

2 Method

1

Step 1. Heat oil in a large heavy-bottomed pan or wok over medium heat. Add cumin seeds and let them sizzle for 30 seconds until fragrant.

2

Step 2. Add the cubed potatoes and a pinch of salt. Sauté for 5-7 minutes until they start to develop a light golden crust.

3

Step 3. Add the cauliflower florets, turmeric, and another pinch of salt. Toss well to coat the vegetables in the spiced oil.

4

Step 4. Cover the pan with a tight-fitting lid and turn the heat to low. Cook for 10-12 minutes, stirring occasionally, until the vegetables are tender but not mushy.

5

Step 5. Remove the lid and add the julienned ginger, green chilies, chili powder, and amchur. Increase heat to medium-high and stir-fry for 3-4 minutes to brown the edges of the cauliflower.

6

Step 6. Sprinkle with garam masala and fresh cilantro. Give it a final gentle toss and serve hot with roti or paratha.

💡 Chef's Tips

  • ·

Do not add water; cooking the vegetables in their own steam under a lid ensures the best texture and concentrated flavor.

  • ·

Ensure the cauliflower florets are completely dry before adding them to the pan to prevent them from becoming soggy.

  • ·

If you don't have amchur, a squeeze of fresh lemon juice at the very end provides the necessary tang.

  • ·

Cut the potatoes smaller than the cauliflower florets since potatoes take longer to cook.
