2 Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Toss the zucchini, bell pepper, red onion, and cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper on the prepared baking sheet. Spread them in a single layer.
Roast the vegetables for 20-25 minutes, or until they are tender and slightly charred around the edges.
While vegetables roast, rinse the quinoa under cold water. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the liquid is absorbed.
Remove the quinoa from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, minced garlic, parsley, and oregano to create the dressing.
In a large mixing bowl, combine the cooked quinoa and roasted vegetables. Pour the lemon herb dressing over the top and toss gently to combine.
Serve warm or at room temperature, garnished with extra parsley if desired.
