2 Instructions
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Spread the cubed sweet potatoes, broccoli florets, and chickpeas onto the baking sheet. Drizzle with 2 tablespoons of olive oil, season with salt and pepper, and toss to coat.
Roast the vegetables for 25-30 minutes, or until the sweet potatoes are fork-tender and the broccoli edges are crispy.
Meanwhile, rinse the quinoa under cold water. Combine it with 2 cups of water or vegetable broth in a saucepan. Bring to a boil, then cover and simmer on low for 15 minutes until the water is absorbed.
Make the dressing by whisking the tahini, lemon juice, maple syrup, minced garlic, and 2-3 tablespoons of warm water together in a small bowl until smooth.
Fluff the quinoa with a fork and divide among four bowls.
Top the quinoa with the roasted vegetables and chickpeas. Drizzle the lemon-tahini sauce over each bowl and garnish with fresh parsley if desired.
