"A classic Italian comfort dish that marries the 'little ears' of orecchiette pasta with savory, crumbled spicy sausage and tender Lacinato kale. Finished with a squeeze of fresh lemon and a generous dusting of Pecorino Romano, it's a balanced meal with a delightful kick."

Ingredients

Qty Item
1 lb Orecchiette pasta
1 lb Spicy Italian sausage, casings removed
1 bunch Lacinato kale, stems removed and chopped
4 cloves Garlic, thinly sliced
2 tbsp Extra virgin olive oil
0.5 tsp Red pepper flakes
0.5 cup Pecorino Romano cheese, grated
1 tbsp Fresh lemon juice
0.5 cup Starchy pasta water

How to Make Spicy Italian Sausage and Kale Orecchiette

1

Bring a large pot of heavily salted water to a boil. Cook the orecchiette according to package directions until al dente.

2

While the pasta cooks, heat the olive oil in a large deep skillet over medium-high heat. Add the sausage meat and cook, breaking it into small crumbles with a wooden spoon, until browned and cooked through (about 7-8 minutes).

3

Add the sliced garlic and red pepper flakes to the skillet. Sauté for 1-2 minutes until the garlic is golden and fragrant, taking care not to burn it.

4

Add the chopped kale to the skillet along with a splash of the boiling pasta water. Cover the skillet for 2 minutes to allow the kale to steam and wilt.

5

Reserve at least 1 cup of pasta water, then drain the orecchiette. Add the pasta directly into the skillet with the sausage and kale.

6

Pour in 1/2 cup of the reserved pasta water, the lemon juice, and half of the Pecorino Romano. Toss vigorously over medium heat for 1-2 minutes until a glossy sauce forms that coats the pasta.

7

Serve immediately topped with the remaining cheese and an extra drizzle of olive oil if desired.

Tips for Best Results

  • ·

Always reserve more pasta water than you think you need; it's the secret to a silky, restaurant-style sauce.

  • ·

For a deeper flavor, let the sausage get slightly crispy and caramelized in the pan before adding the garlic.

  • ·

If Lacinato (Dino) kale is unavailable, curly kale or broccoli rabe make excellent substitutes.

  • ·

Toast the red pepper flakes in the oil to fully release their capsaicin and heat.

Frequently Asked Questions

Can I make this dish vegetarian?
Yes, replace the Italian sausage with a plant-based sausage crumble or chickpeas seasoned with fennel seeds and smoked paprika.
What is the best substitute for Orecchiette?
Any short, cup-shaped pasta like shells (conchiglie) or campanelle will work well to catch the bits of sausage and sauce.
How long will leftovers keep in the fridge?
This pasta stores well in an airtight container for up to 3 days. Reheat with a small splash of water to loosen the sauce.
Is Pecorino Romano necessary or can I use Parmesan?
Pecorino Romano is traditional for its salty, sharp bite, but Parmigiano-Reggiano is a delicious, slightly milder alternative.
