"Experience the luxury of a classic Beef Wellington in perfectly portioned individual servings. Each parcel features a succulent, seared filet mignon coated in an earthy mushroom duxelles and wrapped in golden, flaky puff pastry for a truly sophisticated dining experience."

1 Ingredients

Qty Item
4 6 oz portions Beef Filet Mignon (center cut)
1.5 lb Cremini Mushrooms
2 sheets Puff Pastry Sheets (thawed)
8 slices Prosciutto di Parma
2 tbsp English Mustard
1 tbsp Fresh Thyme
1 large Shallot (minced)
2 cloves Garlic (minced)
2 large Egg Yolk
2 tbsp Unsalted Butter

2 Instructions

1

Season the beef filets generously with salt and pepper. In a very hot pan with a splash of oil, sear the meat for 60-90 seconds per side until browned but raw in the middle. Remove from the pan and immediately brush all over with English mustard. Set aside to cool.

2

To make the duxelles, finely chop mushrooms in a food processor until they resemble coarse breadcrumbs. Sauté in a large dry pan over medium-high heat with shallots, garlic, and thyme. Cook until all the moisture released by the mushrooms has completely evaporated—the mixture should be thick and paste-like. Season with salt and pepper, then cool completely.

3

Lay out a sheet of plastic wrap. Arrange 2 slices of prosciutto in the center, slightly overlapping. Spread a thin layer of the cooled mushroom duxelles over the prosciutto. Place a beef filet in the center and, using the plastic wrap, roll the prosciutto and mushroom mixture tightly around the beef. Tie the ends of the plastic wrap to form a tight log and refrigerate for 30 minutes.

4

Preheat your oven to 400°F (200°C). Roll out the puff pastry and cut into 4 squares large enough to wrap each filet. Remove the beef from the plastic wrap and place in the center of a pastry square. Brush the edges with egg yolk and fold the pastry over the beef, sealing tightly and trimming any excess.

5

Place the parcels seam-side down on a baking sheet lined with parchment paper. Brush the tops with egg yolk and use the back of a knife to lightly score a decorative pattern into the pastry. Chill for another 10 minutes.

6

Bake for 20-25 minutes until the pastry is deep golden brown and the internal temperature of the beef reaches 125°F (52°C) for medium-rare.

7

Remove from the oven and let rest for 10 minutes before serving to ensure the juices stay within the meat.

💡 Tips & Tricks

  • ·

Moisture is the enemy: Ensure your mushroom duxelles is as dry as possible to prevent a soggy bottom.

  • ·

Chilling is essential: Chilling the beef after wrapping it in prosciutto and again after wrapping in pastry helps the Wellington hold its shape and prevents the meat from overcooking.

  • ·

Use a thermometer: Since every oven varies, use an instant-read meat thermometer to pull the beef at exactly 125°F for a perfect medium-rare pink center.

  • ·

Mustard choice: Always use English mustard (like Colman's) for that classic, sharp punch that cuts through the rich pastry.

? Frequently Asked Questions

Can I make these ahead of time?
Yes, you can prepare the Wellingtons up to the point of baking and keep them refrigerated for up to 24 hours.
How do I prevent the pastry from getting soggy?
Ensure the mushroom mixture is cooked until dry, and the prosciutto acts as a barrier to stop meat juices from reaching the pastry.
What should I serve with Beef Wellington?
Classic pairings include roasted root vegetables, a red wine jus, or creamy mashed potatoes.
Do I have to use prosciutto?
Prosciutto provides flavor and a moisture barrier, but you can substitute it with very thin savory crepes if preferred.
