2 Instructions
Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat. Sauté the cubed eggplant until golden brown and softened, about 8-10 minutes, then remove and set aside.
Add another 2 tablespoons of olive oil to the pot. Sauté the onions and bell peppers until translucent and soft, approximately 5-7 minutes.

Stir in the crushed tomatoes, fresh thyme, and the previously cooked eggplant. Season generously with salt and black pepper.
Reduce the heat to low, cover the pot, and simmer for 25-30 minutes. Stir occasionally until the vegetables are tender and the sauce has thickened.
Remove from heat and stir in the fresh basil. Drizzle with a little extra olive oil and serve warm or at room temperature.
