How to Make Tofu Skin and Ginkgo Sweet Soup

Rinse the pearl barley and soak in water for 20 minutes to soften. If using fresh ginkgo nuts, ensure the shell and the bitter green embryo in the center are removed.

Briefly rinse the dried tofu skin to remove any dust and break them into smaller pieces. If you prefer a smoother soup where the tofu skin dissolves, break them into very small fragments.

In a large pot, combine 1.5 liters of water, the pandan leaves, and the soaked barley. Bring to a boil and then reduce to a simmer for about 20 minutes until the barley is tender.

Add the ginkgo nuts and tofu skin pieces to the pot. Continue to simmer for another 15 to 20 minutes. The tofu skin should become soft and the soup will turn slightly milky.
