| 3 large | Carrots, peeled and sliced |
| 2 large | Parsnips, peeled and sliced |
| 3 tbsp | Extra Virgin Olive Oil |
| 1 to taste | Kosher Salt and Black Pepper |

Preheat your oven to 425°F (220°C). Pat the chicken completely dry with paper towels to ensure crispy skin.
In a small bowl, mix the softened butter with half of the rosemary, thyme, garlic, zest of one lemon, salt, and pepper.
Gently loosen the skin over the chicken breast and rub the herb butter directly onto the meat under the skin. Rub any remaining butter over the outside of the chicken.
Stuff the chicken cavity with the zested lemon (halved), the remaining lemon (halved), and a few sprigs of fresh herbs.
Toss the potatoes, carrots, and parsnips in a roasting pan with olive oil, salt, pepper, and the remaining chopped herbs. Spread them into an even layer.
Place the chicken on top of the vegetables or on a roasting rack set over the vegetables. Roast for 75-90 minutes, or until an instant-read thermometer inserted into the thickest part of the thigh reaches 165°F (74°C).
Remove from the oven and let the chicken rest for at least 15 minutes before carving. This allows the juices to redistribute for maximum tenderness.
