"Experience the ultimate comfort food with this succulent whole roasted chicken, featuring crispy skin infused with aromatic rosemary and thyme. Paired with caramelized potatoes, carrots, and parsnips, this one-pan masterpiece is as nutritious as it is flavorful."

1 Ingredients

Qty Item
4 lbs Whole Chicken
2 whole Lemons
4 tbsp Unsalted Butter, softened
2 tbsp Fresh Rosemary, chopped
1 tbsp Fresh Thyme, chopped
4 cloves Garlic Cloves, minced
1 lb Yukon Gold Potatoes, chopped
3 large Carrots, peeled and sliced
2 large Parsnips, peeled and sliced
3 tbsp Extra Virgin Olive Oil
1 to taste Kosher Salt and Black Pepper

2 Instructions

1

Preheat your oven to 425°F (220°C). Pat the chicken completely dry with paper towels to ensure crispy skin.

2

In a small bowl, mix the softened butter with half of the rosemary, thyme, garlic, zest of one lemon, salt, and pepper.

3

Gently loosen the skin over the chicken breast and rub the herb butter directly onto the meat under the skin. Rub any remaining butter over the outside of the chicken.

4

Stuff the chicken cavity with the zested lemon (halved), the remaining lemon (halved), and a few sprigs of fresh herbs.

5

Toss the potatoes, carrots, and parsnips in a roasting pan with olive oil, salt, pepper, and the remaining chopped herbs. Spread them into an even layer.

6

Place the chicken on top of the vegetables or on a roasting rack set over the vegetables. Roast for 75-90 minutes, or until an instant-read thermometer inserted into the thickest part of the thigh reaches 165°F (74°C).

7

Remove from the oven and let the chicken rest for at least 15 minutes before carving. This allows the juices to redistribute for maximum tenderness.

💡 Tips & Tricks

  • ·

For the crispiest skin, leave the chicken uncovered in the refrigerator for a few hours before cooking to dry out the skin.

  • ·

Don't overcrowd the vegetables; if they are in too thick a layer, they will steam rather than roast and caramelize.

  • ·

Tying the legs together (trussing) helps the chicken cook more evenly, though it is not strictly necessary.

  • ·

Use the pan drippings to make a quick gravy or pour them directly over the carved meat for extra flavor.

? Frequently Asked Questions

Can I use dried herbs instead of fresh?
Yes, but use only 1/3 of the amount specified for fresh herbs, as dried herbs are much more concentrated in flavor.
How do I know when the chicken is finished without a thermometer?
Pierce the thigh with a knife; the juices should run clear, not pink. However, a meat thermometer is the only way to guarantee safety and moisture.
What other vegetables work well with this recipe?
Sweet potatoes, red onions, and rutabaga are excellent substitutes or additions to the root vegetable medley.
How should I store and reheat leftovers?
Store in an airtight container in the fridge for up to 3-4 days. Reheat in the oven at 350°F covered with foil to keep the meat from drying out.
