| 0.5 cup 170 g | Raw honey |
| 0.25 cup 60 ml | Freshly squeezed lime juice |
| 2 cups 475 ml | Chilled sparkling water or club soda |
| 4 slices 4 pieces | Lime rounds and fresh mint for garnish |
2 Method
Step 1. In a medium saucepan, combine the grated ginger and 2 cups of water.
Step 2. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes to extract the ginger flavor.
Step 3. Remove the pan from heat and stir in the honey until it is completely dissolved.
Step 4. Let the ginger syrup cool to room temperature, then strain through a fine-mesh sieve or cheesecloth into a glass jar, pressing on the solids to extract all the liquid.
Step 5. Stir the fresh lime juice into the cooled ginger syrup.
Step 6. To serve, fill four glasses with ice. Pour 1/4 cup of the ginger-lime syrup into each glass.
Step 7. Top each glass with 1/2 cup of chilled sparkling water and stir gently to combine.
Step 8. Garnish with a lime round and a sprig of mint before serving.
