How to Make Prawn Toast Bites
Place the prawns, egg white, ginger, soy sauce, and sesame oil into a food processor. Pulse several times until the mixture forms a coarse, slightly chunky paste. Do not over-process into a complete puree.
Transfer the prawn mixture to a bowl and fold in the finely chopped spring onions.
Remove the crusts from the bread slices if desired. Spread the prawn paste evenly over one side of each bread slice, making sure to reach the very edges.
Place the sesame seeds in a shallow bowl or plate. Press the bread slices, paste-side down, into the sesame seeds until the surface is completely and thickly coated.
