2 Instructions
Step 1. In a large bowl, toss the beef cubes with flour, salt, and pepper until evenly coated.
Step 2. Heat olive oil in a large skillet over medium-high heat. Brown the beef in batches until a crust forms on all sides. Transfer browned beef to the slow cooker.
Step 3. Pour the red wine into the hot skillet, scraping up any browned bits (fond) from the bottom. Pour this liquid into the slow cooker.
Step 4. Add the onion, garlic, carrots, and potatoes to the slow cooker.
Step 5. In a small bowl, whisk together the beef broth, tomato paste, and Worcestershire sauce. Pour the mixture over the meat and vegetables.
Step 6. Add the dried thyme and bay leaf. Cover and cook on Low for 7-8 hours or on High for 4-5 hours, until the beef is fork-tender.
Step 7. Remove the bay leaf. Season with additional salt and pepper if needed. Serve hot, garnished with fresh parsley if desired.
