2 Instructions

Place the sliced bell peppers and onions onto the sheet pan. Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper. Toss until the vegetables are evenly coated.
Arrange the Italian sausage links among the vegetables on the sheet pan, making sure they are in a single layer.
Roast in the oven for 20-25 minutes, tossing the vegetables and flipping the sausages halfway through, until the sausages are browned and cooked through (internal temperature of 160°F) and the vegetables are tender.
While the pan is still hot, slice the hoagie rolls lengthwise. Place a slice of provolone cheese inside each roll and set them on the sheet pan (or a separate tray) for 2-3 minutes to melt the cheese and toast the bread.
