1 tbsp 15 ml Sake
1 tbsp 15 ml Mirin
1 tbsp 15 g Fresh Ginger (grated)

0.5 cup 60 g Potato Starch (Katakuriko)
2 cups 480 ml Neutral Oil (for frying)

Step 1. Cut the chicken thighs into 1.5-inch bite-sized pieces, ensuring each piece has a bit of skin for maximum crunch.

Step 2. In a medium bowl, combine the soy sauce, sake, mirin, grated ginger, and minced garlic. Add the chicken pieces and toss to coat thoroughly. Marinate for at least 30 minutes in the refrigerator.

Step 3. Drain the excess marinade from the chicken. One by one, dredge each piece of chicken in the potato starch, pressing firmly so the starch adheres. Tap off any excess.

Step 4. Heat the neutral oil in a heavy-bottomed pot or wok to 320°F (160°C). Fry the chicken in batches for 2-3 minutes until the exterior is a very light golden color. Do not overcrowd the pot.

Step 5. Remove the chicken and let it rest on a wire rack for at least 3 minutes. This allows the internal heat to finish cooking the meat while the moisture evaporates from the crust.

Step 6. Increase the oil temperature to 375°F (190°C). Fry the chicken a second time for 45-60 seconds until the crust is deep golden brown and extremely crispy.
