2 Method
Step 1. Prepare the tomatoes by dicing them and removing the watery seeds; place the flesh in a medium mixing bowl.
Step 2. Add the minced garlic, fresh basil, extra virgin olive oil, balsamic vinegar, salt, and pepper to the tomatoes. Toss gently and let the mixture sit at room temperature for 15 minutes to allow the flavors to meld.
Step 3. Slice the bread into 1/2-inch thick slices and brush both sides lightly with olive oil.
Step 4. Arrange the bread on a baking sheet and toast in a 400°F (200°C) oven for about 5-7 minutes until the edges are golden brown and crisp.
Step 5. Remove the bread from the oven and immediately rub the halved garlic clove across the top surface of each warm slice.
