2 Method
Step 1. Preheat your oven to 400°F (200°C). Lightly grease a medium-sized baking dish.
Step 2. Place a large skillet over medium-high heat. Add the corn kernels and cook, stirring occasionally, for 8-10 minutes or until they begin to char and turn golden brown. Remove from heat.
Step 3. In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, minced garlic, smoked paprika, and diced jalapeño. Stir until the mixture is smooth and well-incorporated.
Step 4. Fold in the charred corn and 1 cup of the shredded cheddar cheese.
Step 5. Transfer the mixture to the prepared baking dish and spread it evenly. Top with the remaining 0.5 cup of cheddar cheese.
Step 6. Bake for 15-20 minutes, or until the dip is bubbling and the cheese on top is melted and slightly golden.
