Step 1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.

Step 2. In a medium bowl, combine graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then remove and let cool completely.

Step 3. Reduce oven temperature to 325°F (160°C). In a large bowl or stand mixer, beat the room-temperature cream cheese and 1 cup sugar on medium speed until smooth and creamy, about 2-3 minutes. Do not overmix.
