| 2 inch piece 50 g | Daikon Radish |
| 1 tsp 2 g | Togarashi (Red Chili Powder) |
| 2 tbsp 10 g | Fresh Chives or Scallions |
| 1 pinch 1 g | Shredded Nori |
2 Method
Step 1. Prepare the Ponzu sauce by whisking the soy sauce, yuzu juice, and mirin in a small bowl. Let it sit for 10 minutes to allow the flavors to meld.
Step 2. Make the Momiji Oroshi by finely grating the daikon radish. Squeeze out excess liquid and mix the radish pulp with the togarashi until it turns a light orange color.
Step 3. Thoroughly scrub the oyster shells under cold running water to remove any sand or debris.
Step 4. Shuck the oysters carefully using an oyster knife. Ensure you keep as much of the natural 'liquor' (liquid) inside the shell as possible.
Step 5. Use the knife to sever the adductor muscle from the bottom of the shell so the oyster is easy to consume.
Step 6. Arrange the oysters on a platter filled with crushed ice or rock salt to keep them steady and cold.
Step 7. Drizzle approximately one teaspoon of the prepared ponzu over each oyster.
Step 8. Place a small dollop of the momiji oroshi on top of each oyster and garnish with finely chopped chives and shredded nori.
Step 9. Serve immediately while chilled.
