2 Method
Step 1. Clean the crabs thoroughly, crack the claws slightly to allow the sauce to penetrate, and pat dry with paper towels.
Step 2. Dredge the crab pieces in cornstarch, shaking off any excess. Deep fry in hot oil until the shells turn bright red and the meat is cooked (about 3-5 minutes). Remove and drain on paper towels.
Step 3. In a large wok over medium-low heat, melt the butter. Add the minced garlic, curry leaves, and bird's eye chilies. Sauté until the curry leaves become fragrant and crisp.
Step 4. Add the mashed salted egg yolks to the wok. Stir continuously until the mixture becomes foamy and bubbly.
Step 5. Pour in the evaporated milk and add the sugar. Continue to stir until the sauce thickens slightly and becomes smooth.
Step 6. Return the fried crab pieces to the wok. Toss vigorously to ensure every piece of crab is thoroughly coated in the golden salted egg sauce.
Step 7. Serve immediately while hot, garnished with a few extra fresh curry leaves if desired.
