2 Instructions
Step 1. Rinse the rice and cook it according to package instructions. Once cooked, fluff with a fork and stir in the lime juice and chopped cilantro.
Step 2. Rub the chicken breasts evenly with the taco seasoning.
Step 3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C).
Step 4. Remove the chicken from the pan and let it rest for 5 minutes before slicing into strips or cubes.
Step 5. In the same skillet or a small pot, briefly warm the black beans and corn until heated through.
Step 6. Assemble the bowls by dividing the cilantro-lime rice among four bowls. Top each with the cooked chicken, beans, corn, avocado slices, and a generous spoonful of pico de gallo.
