2 Method
Step 1. In a large bowl, whisk together the beaten egg, salt, and pepper. Add the chicken pieces and toss to coat.
Step 2. In a separate shallow dish, combine the cornstarch and flour. Dredge each piece of chicken in the flour mixture until fully coated.
Step 3. Heat vegetable oil in a heavy-bottomed pot or wok to 350°F (175°C). Fry the chicken in batches for 5-6 minutes until golden brown and crispy. Drain on a wire rack.
Step 4. In a small saucepan, combine orange juice, zest, soy sauce, rice vinegar, brown sugar, garlic, and ginger. Bring to a simmer over medium heat.
Step 5. Mix 1 tablespoon of cornstarch with 1 tablespoon of water to create a slurry. Whisk the slurry into the simmering sauce and cook until thickened.
Step 6. Place the fried chicken in a large bowl, pour the warm orange sauce over it, and toss gently to coat every piece evenly. Serve immediately over steamed rice.
