Slow-Roasted Chicken with Preserved Lemon

2 Method
Step 1. Preheat your oven to 300°F (150°C). Pat the chicken completely dry with paper towels.
Step 2. Remove the pulp from the preserved lemons and discard. Finely mince the rinds and mix with olive oil, minced garlic, cumin, paprika, and crushed saffron in a small bowl.
Step 3. Rub the lemon-spice mixture all over the chicken, including under the skin of the breast and inside the cavity.
Step 4. Place the chicken in a heavy-bottomed roasting pan or Dutch oven. Pour the chicken stock into the bottom of the pan and scatter the olives around the base.
Step 5. Cover tightly with a lid or double layer of foil and roast for 2 hours. The low temperature ensures incredible moisture.
Step 6. Remove the cover, increase oven temperature to 425°F (220°C), and roast for another 20-30 minutes until the skin is golden and crispy.
Step 7. Let the chicken rest for 15 minutes before carving. Garnish with plenty of fresh chopped parsley and serve with the pan juices.
